Creamy Lemon Miso Dressing
Creamy and tangy from lemon and mustard, and full of umami from miso paste, this dressing is delicious tossed with thinly sliced purple cabbage for a bright slaw, mashed into avocado for a delicious avocado toast, drizzled over a grain bowl, or simply tossed with lettuce for a bright salad.

¼ cup Dijon mustard
¼ cup fresh lemon juice
½ cup olive oil
2 tsp white miso paste
Salt and ground pepper, to taste
Add all ingredients to a mason jar and shake until well-mixed. Use a fork to break up the miso as needed.
