Quinoa Salad
This dish is magical on a hot summer day. The combination of crisp cucumber, tangy and salty feta, and refreshing mint makes for a delightfully cooling salad. It also makes for a great school or work lunch on the go!

2 cups quinoa
1 tsp salt
7 oz feta, crumbled into ½ inch pieces
1 large or 2 small cucumbers, peeled, seeded, and cut into ½ inch pieces
â…“ cup chopped mint leaves
Juice of 2 limes
½ tsp salt
Freshly ground black pepper
1/2 cup extra virgin olive oil
Cook the quinoa as directed on the package along with the salt. Let it cool completely before assembling the salad.
Add all ingredients except the feta in a large bowl and mix well. Add the feta and gently fold it in to prevent crumbling. Serve chilled.
