Simple Lasagna
Lasagna is filled with cheese, which is what makes it so delicious. Dairy products can often have high environmental impacts. If you can find it, buy cheese that has at least one of the certifications from this Food Label Guide.

1 box lasagne noodles
16 oz mozzarella cheese, thinly sliced
8 oz ricotta
1 egg
½ tsp black pepper
1 tsp garlic powder
12 oz spinach
2 jars of your favorite marinara sauce
3 cloves garlic, minced
Preheat the oven to 350.
Cook the lasagna noodles as instructed.
Heat 2 tbsp olive oil in a pan. Add the garlic and cook until it’s softened and fragrant. Add the spinach and sauté until just wilted.
Mix the ricotta with the egg and spices.
Spread a thin layer of marinara sauce on a large baking pan. Then spread 4 of the noodles on the bottom. Place a layer of mozzarella cheese over the noodles, then spoon over a thin layer of sauce. Add another layer of noodles. Spread the ricotta, then spread all the spinach over. Add another generous layer of sauce. Add noodles, another generous layer of sauce, and the rest of the mozzarella. Bake in the oven for ~30 mins, until the cheese is bubbly.
